Once the oil is hot, add mustard seeds (kadugu) and urad dal, and let them splutter. The urad dal should turn golden brown. 3. Sautéing: Add the finely chopped onions and curry leaves to the pan and sauté until the onions turn translucent. A pinch of asafoetida (hing) can be added at this stage to enhance the flavor.
