Tomato Sambar For Idle/Dosa


Ingredients:

- 3-4 tomatoes, chopped

- 2 tablespoons oil, for cooking

- Salt, to taste

- 1/4 cup grated coconut

- 3-4 garlic cloves

- 1-inch piece of ginger

- 1/2 teaspoon fennel seeds

- 1 tablespoon roasted bengal gram

- 1/2 teaspoon mustard seeds

- 1 teaspoon urad dal

- 1 medium-sized onion, finely chopped

- Curry leaves, a few sprigs

- 1/2 teaspoon turmeric powder

- 1 teaspoon chili powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- Water, as needed

- Fresh coriander leaves, for garnish


Instructions:

1. Heat 1 tablespoon of oil in a pan over medium heat. Add the chopped tomatoes, a pinch of salt, and sauté until the tomatoes are soft and cooked. Allow it to cool slightly and then grind it to a smooth paste. Set aside.

2. In the same pan, add another tablespoon of oil. Add grated coconut, garlic cloves, ginger, fennel seeds, and roasted bengal gram. Fry them until they turn golden brown and aromatic. Let it cool, and then grind it to a fine paste. Keep it aside.

3. Heat the pan again and add 2 tablespoons of oil. Once the oil is heated, add mustard seeds. Allow them to splutter.

4. Add urad dal and sauté until it turns golden brown. Then, add finely chopped onions and curry leaves. Stir and sauté until the onions become translucent.

5. Add turmeric powder and mix well. Then, add chili powder, coriander powder, and garam masala. Stir and cook the spices for a minute.

6. Add the ground tomato paste to the pan. Mix well and let it cook for 2-3 minutes to blend the flavors.

7. Pour in water as needed to achieve the desired consistency for your sambar. Mix well and bring it to a boil.

8. Now, add the ground coconut paste to the sambar and mix well. Let it simmer for 10 minutes, allowing the flavors to meld together.

9. Check the seasoning and adjust salt if needed.

10. Once the sambar is cooked and flavors are well-incorporated, turn off the heat.

11. Garnish with fresh coriander leaves.

12. Serve the super tomato sambar with idli, dosa, or uthapam for a delicious and satisfying meal.
