Super Tasty Homemade Paruppu Podi (Toor Dal Powder)


Homemade spice blends are a treasure in every kitchen, and one such gem is the flavorful Paruppu Podi, also known as Toor Dal Powder. This aromatic powder adds a burst of taste to your meals and can be enjoyed with a variety of dishes. Ingredients:

- Toor dal

- Garlic cloves with skin

- Curry leaves

- Red chilies

- Yellu (sesame seeds)

- Fried gram (roasted gram)

- Groundnut (peanuts)

- Siragam (cumin seeds)

- Hing (asafoetida)

- Ghee (clarified butter)

- Salt to taste



Instructions:

1. Roasting the Ingredients:

 -Heat a pan, add oil and add garlic cloves with the skin on. Fry them until they become golden brown, then remove them from the pan and keep them aside.



- In the same pan with oil, add curry leaves and red chilies to the pan. Fry them until the curry leaves turn crispy and the chilies become slightly darker in color. Set these aside as well.


- Now, individually dry roast the yellu (sesame seeds), fried gram, groundnut, and siragam (cumin seeds) until they release their flavors and become fragrant. Each ingredient should be roasted separately to ensure even cooking.


- Finally dry roast the Toor dal until it turns golden brown and gives off a pleasant aroma. Don't forget to add a pinch of hing during this step to enhance the flavor and aid digestion. Now add all the dry roasted ingredients and the fried garlic cloves, curry leaves and red chillis and mix well for 2 minutes and off the flame and allow it to cool.



2. Blending the Ingredients:

- Once all the roasted ingredients have cooled down, combine them in a mixing bowl.

- Sprinkle a pinch of salt to taste.



3. Grinding:

- Grind all the ingredients into a fine powder using a blender or spice grinder. Make sure to achieve a uniform consistency for the Paruppu Podi.



4. Final Touch:

- Let the ground Paruppu Podi cool down completely before transferring it to an airtight container.

- You can store this homemade Paruppu Podi in the refrigerator for over a month. Its long shelf life makes it a convenient and delicious addition to your meals.


How to Enjoy:

1. With Idli and Dosa: Spread a generous amount of Paruppu Podi over your idlis or dosas for an extra burst of flavor. You can also drizzle some ghee on top for an indulgent treat.

2. Podi Roast Dosa: Sprinkle the Paruppu Podi on dosas while they're cooking, along with a little ghee. This creates a mouthwatering Podi Roast Dosa.
