Ingredients:

- 2 tablespoons oil

- 1 tablespoon Chenna dal

- 1 tablespoon urad dal

- Small onion

- 2-3 garlic cloves

- A handful of curry leaves

- 2-3 dried red chillies, as per your spice preference

- 1-inch ginger, grated

- A pinch of hing (asafoetida)

- Salt, to taste

- 1/2 cup grated coconut

- Small sized tamarind

- 4-5 ripe tomatoes, chopped

- 1 teaspoon chilli powder (adjust to taste)

Instructions:

1. Heat the Oil: In a pan, heat the oil over medium heat. Add Chenna dal and urad dal. Fry until they turn golden brown, ensuring they don't burn.

2. Sauté Aromatics: Add the small onion, garlic, curry leaves, dried red chillies, and grated ginger. Sauté until the onions become translucent and the mixture is aromatic.

3. Add Seasonings: Sprinkle in the hing and salt. Mix well to incorporate the flavors.

4. Include Coconut: Add the grated coconut to the pan. Stir and roast until the coconut turns golden brown, enhancing the chutney's texture and taste.

5. Tamarind and Tomatoes: Put the tamarind into the pan along with the chopped tomatoes. Cook until the tomatoes soften and blend with the other ingredients.

6. Spice it Up: Introduce the chilli powder, giving the chutney a lovely, spicy kick. Adjust the quantity based on your spice preference.

7. Cook to Perfection: Cover the pan with a lid and let the mixture simmer for about 5 minutes. This helps blend the flavors and ensures the raw smell disappears.

8. Cool and Blend: Once the mixture has cooled down, transfer it to a mixer jar. Grind into a smooth paste, adding water if necessary. The chutney should have a thick, spreadable consistency.

9. Serve and Enjoy: Your delicious tomato chutney is ready to be served! Pair it with hot dosas, fluffy idlis, or soft chapathis. The burst of flavors will delight your taste buds.

Prepare this quick and tasty tomato chutney to add a zing to your breakfast or dinner. It's a versatile accompaniment that will surely become a favorite in your household. Enjoy your meal!
