Karuvepillai/Curry Leaves Podi



Ingredients:

- 1 cup curry leaves, washed and dried

- 1/4 cup fried gram (roasted gram)

- 2 tablespoons urad dal

- 2 tablespoons chana dal

- 1 tablespoon toor dal

- 1 teaspoon cumin seeds

- 4-5 dried red chilies

- Asafoetida

- 6-8 garlic cloves, with the skin on

- Salt to taste

- 1 tablespoon oil (for frying the garlic and curry leaves)



Instructions:

1. Wash the curry leaves well and pat them dry to remove any moisture.

2. In a dry pan, roast the fried gram, urad dal, chana dal, toor dal, cumin seeds, Asafoetida and dried red chilies over medium heat. Roast until the dals turn golden brown and emit a nutty aroma.

Ensure they don't burn. Set aside to cool and add some salt.





3. In the same pan, add a tablespoon of oil and fry the garlic cloves until they turn reddish-brown. Remove from heat and allow them to cool.






4. Once the roasted ingredients and garlic have cooled down, grind them together along with salt to a coarse powder. You can adjust the consistency according to your preference.


5. Transfer the Karuvepillai/Curry Leaves Podi to an airtight container and store it in the refrigerator.


6. To serve, mix the podi with hot rice and ghee for a delicious meal. It can also be used as a condiment with idli and dosa.
