Ingredients:

- Drumsticks

- Potatoes

- Onions

- Curry Leaves

- Turmeric Powder

- Ginger, Garlic, Small Onion, and Pepper balls Paste

- Tomato Paste

- Garam Masala

- Coriander Powder

- Chilli Powder

- Kootu Podi or Sambar Powder

- Hing (Asafoetida)

- Salt

- Coriander Leaves

- Grated Coconut

- Fried Gram (Pottukadalai)

- Sombu (Fennel Seeds)

- Oil

- Water



Instructions:

1. Prepping the Vegetables: Begin by cleaning and cutting the drumsticks and peeling and dicing the potatoes.



2. Sauté the Aromatics: Heat oil in a pan and add sombu (fennel seeds). Next, add finely chopped onions and curry leaves. Sauté until the onions turn translucent.



3. Turmeric Infusion: Sprinkle turmeric powder into the pan and stir well. This step infuses the oil with the beautiful golden hue of turmeric.



4. Add Vegetables: Add the cleaned drumsticks and diced potatoes to the pan. Fry them until they begin to develop a slight golden crust.



5. Homemade Paste: Now, add the paste made from fried and ground ginger, garlic, small onions, and pepper balls. This paste adds a unique homemade flavor.



6. Tomato Magic: Incorporate the fried and ground tomato paste. This process removes any raw taste and intensifies the flavor of the dish.

11. Coconut Creaminess: Once the vegetables are cooked to perfection, it's time to add the coconut, fried gram, and sombu paste. This step adds a rich creaminess to your sambar.



12. Final Touch: Allow the mixture to cook until you achieve the desired consistency.
