Easy and Tasty Tomato Chutney Recipe

Ingredients:

- 4 ripe tomatoes, chopped

- 4-5 cloves of garlic

- 1/2 cup small onions, chopped

- 1 tablespoon coriander seeds

- 1 teaspoon cumin seeds (siragam)

- 1/4 cup fresh coriander leaves, chopped

- 1 spring curry leaves

- Small lemon-sized ball of tamarind

- 1 teaspoon red chili powder

- Salt to taste

- 2 tablespoons oil

- 1/2 teaspoon mustard seeds (kadugu)

- A pinch of asafoetida (hing)



Instructions:

1. Prepare the Spice Mix:

- Heat a pan over medium heat and add oil. Once hot, add coriander seeds and cumin seeds. Roast until they release a pleasant aroma.



- Add garlic cloves, small onions,curry leaves and salt. Add coriander leaves and saute well. Sauté until they turn golden brown.



2. Cooking the Tomatoes:

- Add chopped tomatoes to the pan. Stir well and let them cook until they become soft and the raw smell disappears.



- Now, add tamarind, red chili powder. Mix everything thoroughly and continue cooking until the tomatoes are completely mushy.



3. Grinding the Chutney:

- Turn off the heat and let the mixture cool down. Once cooled, transfer it to a blender and grind it into a smooth paste.



4. Tempering:

- In another pan, heat oil and add mustard seeds. Let them splutter.



- Add a pinch of asafoetida (hing) for a burst of flavor.



- Carefully pour the ground chutney into the pan. Mix well with the tempering, ensuring it's evenly combined.



- Allow the chutney to simmer for 2 minutes until you see the oil surfacing on top. This indicates that the chutney is ready.



5. Serve and Enjoy:

- Transfer the chutney to a serving bowl. It's now ready to be served with piping hot idlis, crispy dosas, or soft chapathis.


- Store any leftovers in an airtight container in the refrigerator. This chutney stays fresh and flavorful for 2-3 days.
