Easy and Tasty Kulli Paniyaram/Paddu Recipe: A Delightful South Indian Delicacy


Kulli Paniyaram, also known as paddu, is a popular South Indian snack that's loved for its crispy outer layer and soft, flavorful interior. This simple and delicious recipe brings together a medley of spices, vegetables, and the goodness of dosa batter to create a delightful treat that can be enjoyed for breakfast, snack, or even dinner.


Ingredients:

- Dosa batter

- Oil or ghee

- Mustard seeds (kadugu)

- Cumin seeds (siragam)

- Urad dal

- Chana dal

- Chopped onions

- Coriander leaves

- Curry leaves

- Green chillies

- Asafoetida (hing)

- Grated coconut

- Salt to taste



Instructions:

1. Heat a pan and add oil.


2. Add mustard seeds, cumin seeds, urad dal, and chana dal. Sauté until they start to sizzle.



3. Add chopped onions, coriander leaves, curry leaves, and green chillies. Fry until the onions turn translucent.


4. Sprinkle a pinch of asafoetida (hing) and mix well.



5. Add the grated coconut and continue to sauté until the mixture is aromatic.


6. Now, combine this mixture with the dosa batter. Make sure the batter has been seasoned with salt.


7. Allow the batter mixture to rest for about 10 minutes, covered with a lid.


8. While the mixture is resting, heat a kulli paniyaram pan and grease it with oil or ghee.


9. Once the pan is heated, pour the batter mixture into the holes of the pan.


10. Cook the paniyarams on low flame for around 5 minutes. This slow cooking ensures a crispy outer layer and a well-cooked inner layer.


11. Carefully turn the paniyarams to the other side using a spoon or skewer.



12. Cook the other side for an additional 5 minutes, adding more oil or ghee if needed.


13. The paniyarams should be golden brown and crisp on both sides.


14. Remove the paniyarams from the pan and serve hot.
