Ingredients:

- Nattu Koli (Country Chicken): Cleaned and ready

- Garam Masala: 1 teaspoon

- Coriander Powder: 1 teaspoon

- Chilli Powder: 1/2 teaspoon (adjust to taste)

- Turmeric Powder: 1/2 teaspoon

- Tomato: 1, finely chopped

- Coriander Leaves: A handful, chopped

- Ginger Garlic Paste: 1 tablespoon

- Salt: To taste

- Oil: 2 tablespoons

- Water: A little

- Kadugu (Mustard Seeds): 1/2 teaspoon

- Urad Dal: 1/2 teaspoon

- Sombu (Fennel Seeds): 1/2 teaspoon

- Onion: 1, finely chopped

- Curry Leaves: A few

- Pepper: Crushed, to taste

Instructions:

1. Prep the Chicken: Begin by cleaning the Nattu Koli thoroughly and setting it aside.

2. Cooking the Chicken: In a pressure cooker, combine the cleaned chicken with garam masala, coriander powder, chili powder, turmeric powder, chopped tomato, chopped coriander leaves, ginger garlic paste, salt, and oil. Mix well to coat the chicken with the spices. Add a small amount of water and pressure cook for 3-4 whistles.

3. Tempering: In a pan, heat some oil. Add mustard seeds (kadugu) and urad dal. Once they start to splutter, add sombu (fennel seeds), chopped onion, and curry leaves. Sauté until the onions turn translucent.

4. Adding Flavor: Now, add crushed pepper to the pan and sauté for a moment to release its aroma.

5. Bringing It All Together: Carefully add the boiled Nattu Koli from the pressure cooker along with the water. Allow it to simmer until the excess water reduces and the dish thickens. For a semi-gravy consistency, you can turn off the flame at this stage.

If you prefer it dryer, cook for an additional 2 minutes with the lid closed.

6. Finishing Touch: Sprinkle chopped coriander leaves over the dish for added freshness and flavor.

Serving:

Serve this delicious Nattu Koli Sukka as a side dish with chicken gravy or rasam. The rich and aromatic flavors of the dish will tantalize your taste buds and leave you craving for more. Don't hesitate to try the same recipe with chicken or mutton for equally delightful results!
