Delicious and Nutritious Murungakeerai Poriyal Recipe

Murungakeerai, also known as drumstick leaves, is a nutrient-rich green leafy vegetable that is widely enjoyed for its distinct flavor and numerous health benefits. Ingredients:

- Fresh Murungakeerai (Drumstick leaves)

- Oil

- Mustard seeds (kadugu)

- Urad dal

- Channa dal

- Onion, finely chopped

- Tomatoes, chopped

- Red chilli powder/Red Chilli (adjust to taste)

- Water

- Salt (to taste)

- Grated coconut (for garnishing)



Instructions:

1. Preparation:

- Start by plucking the murungakeerai leaves from their stems. Wash them thoroughly in cold water to remove any dirt or impurities. Drain the leaves well and set them aside.



2. Tempering:

- Heat a pan over medium heat and add oil. Once the oil is hot, add mustard seeds (kadugu), urad dal, and channa dal. Allow them to splutter and turn golden brown.



3. Sautéing Onions and Tomatoes:

- Add finely chopped onions to the pan and sauté until they turn translucent and slightly golden. Then, add the chopped tomatoes and cook until they become soft and mushy.



4. Adding Murungakeerai:

- Gently add the cleaned murungakeerai to the pan. It's important not to mix it immediately. Close the lid and let it cook for a few seconds. This helps the leaves to steam and cook in their own moisture.



5. Mixing and Seasoning:

- After a few seconds, open the lid and gently mix the contents of the pan. Add red chilli powder or the red chilli according to your preference for spiciness. Pour a little water into the pan to help the keerai cook further.



6. Boiling and Simmering:

- Close the lid again and allow the murungakeerai to boil and simmer in its own juices. Open the lid occasionally to check the progress.


7. Adding Salt:

- Once the murungakeerai has cooked well and the water has reduced, add salt to taste. Gently mix everything together and let it cook for a few more minutes.



8. Final Touch:

- As the murungakeerai turns tender and the water is fully drained, the color of the leaves will change. At this stage, add grated coconut to enhance the flavor and aroma of the poriyal.




9. Serving:

- Your delicious Murungakeerai Poriyal is now ready to be served! It pairs perfectly with hot steamed rice and a side of sambar for a complete and wholesome meal.
